Italian Barista Method Certifications

Compared to other barista training methods, Italian Barista Method has its focus on the real needs of the barista: be able to prepare the required recipes with efficiency, speed and self confidence, be able to offer the best quality in the shortest time, for the interest of the coffee shop and for the satisfaction of the clients.

In practice, being certified Italian Barista Method Advanced really means indeed be able to work in a coffee shop with the best theoretical but mainly practical preparation!

In addition, one of Italian Barista Method’s mission is to get back the original recipes of the tradition and history of espresso. From bicerin to cortado to espresso shakerato. Also, with IBM we can recuperate the taste given by the first espresso machines of the 1910s. In short, be an IBM certified barista means being a updated barista with a broad knowledge of coffee: in skills, tradition and recipes from all over the world!

The course is one day long, from 10 am to 5.30pm. This course is joined with the barista basic day, to make more complete the training.

How do the Italian Barista Method Works?

The Italian Barista method certification system has three levels: 

  • Junior barista   

  • Barista      

  • Top barista (if you run the Barista Time Trial in 7’30” or less)

The philosophy of IBM is very simple:

What a junior barista MUST be able to do?

  • Set coffee grinder and extraction

  • Know how to prepare the basic recipes quickly and correctly.

  • Be able to explain what he is doing and interact with the customer.

What a barista must be able to do?

  • Knows and be able to transmit knowledge about the coffee production line, from bean to cup.

  • Be fast, efficient and self confident!

  • Be able to prepare latte art

  • Be able to write down an espresso based menu for its coffee shop, starting from the exam of the target and the location.

What an Top barista must be able to do?

  • Be fast, efficient and self confident as nobody else!

In order to be certified in each of these levels it is necessary to pass successive exams. The exams are based on a theoretical section of about 20/25 questions and then on a practical part.

The training for the preparation of the Italian Barista Method Certifications can be taken at Espresso Academy in Italy or in the partner schools worldwide (here you can find the complete list).

If the exam is passed, you will receive the certification from Italy, and your name will be registered as on the official Italian Barista Method website.


The Barista Time Trial is based on the classic barista situation: at the center of the counter, alone with your espresso machine and a row on client shouting frantically. Be fast and precise is the only way to survive! The faster, the winner!

In the time trial the barista is called to prepare 10 recipes, asked randomly among classic Italian preparations, in the fastest possible time.

To pass the barista exam, the barista has 10 minutes to prepare everything, to pass the Top Barista Level has 7 minutes 30 seconds, but he can also try to beat the country, area and world record! If the result got during the Barista exam is not satisfying you, the exam can be tried again according with the trainer. IBM organizes yearly competitions of Barista Time Trial all over the world

    • We attended the two-day Barista course (advanced level) and its really cool and awesome. Our instructor-Gabriele shares all the techniques and secrets to make a perfect espresso and cappuccino, plus the coffee art which every participants were so excited and enjoyed every hands-on. As part of the Advanced level course, Gabriele also gave us a tour inside their processing plant. A highly recommended tour if you're visiting Florence both for individual who's looking for a career in coffee industry or simply Coffee lovers.
